All 28 pairs need to be available for csDash... you are only controlling what you see on the screen with "show...". Does your broker offer EURNZD and NZDCAD? If not, unfortuantely csDash will not work for you

This is one of MT4's shortcomings. You can fix the small text size by using an external manifest file. It requires a registry edit, which isn't particularly complex but some people have an aversion to it. More info here
