Some brokers are open 24/7. But even if not, can you not buy a currency on the weekend? Commodity market also closes for the weekend and can you not buy sugar or wheat during the weekend? The is an offline world, too...always has been.

Gaps don't need to close, as they don't really exist. Currencies are moving 7 days a week, even though most brokers only allow to trade on 5. Brokers open all week have no gaps on charts.
